Retro Recipes and Traditional Fare

veal_chop1.jpgThere is food that sustains us and then there are foods that make us happy, content and "primally" nourished. I don't eat food that has any labels or tags to read. I just eat the raw ingredient that has a little story to tell me quietly about how I should best cook it.

Whether it be vegetable or fish or meat or grain looking at it inspires me to figure out how best to prepare it in this moment. Recipes are only a guideline. It is the cook's choice to have a little fun or a burst of creativity and I guess that depends on the ingredients in front of you and how deeply you react to them.

I have to admit I am a veal chop junkie and I am verbalizing it to the world! I LOVE VEAL CHOPS, HOPELESSLY!!!  Whenever I say that, which is rarely I look around like I was talking about George W. Bush because everyone has a reaction to veal and I am sure that it isn't fifty fifty.

chickenmarengoChicken Marengo is an amazing Italian savory dish named for being themeal Napoleon Bonaparte feasted on after the Battle of Marengo (a battle between the French and the Austrians in the 1800s).

Apparently Napoleon demanded a quick meal once the battle ended. His chef was forced to come up with something great with only meager supplies on hand; chicken (and some eggs), tomatoes, onions, garlic, herbs, olive oil and crayfish. The chicken was allegedly cut up with a sabre and fried in olive oil.

A sauce was made from tomatoes, garlic and onions (even some Cognac from Napoleon's flask) while the crayfish was cooked up on the side and all was served over eggs with some of the soldier's bread ration on the side. Napoleonraved overthe food and since he had won the battle, considered this dish lucky. On future occasions Napoleon refused to have the ingredients altered, even when his chef wanted to omit the crayfish.

Modern versions of this dish, such as this one, leave out the crayfish and add olives for flavor. Serving this over polenta also makes this comfort food to the max. The flavors are over the top and you will love how moist the chicken becomes.

bulgarbreakfastIt's that time of year again when everyone is ready to jump onto the get-fit wagon. I could easily say that I should include myself in that group, but I believe it's best to start by taking small steps before diving into a plan that you might not keep up. My first step for the New Year is a healthy one, it's simply to eat more healthy foods, like whole grains and to limit my intake of sugar. I actually love whole grains, but I just don't eat them often enough. Luckily my only downfall sugar-wise is chocolate, so it's easy for me to exclude sweets and candies entirely. But I've recently found myself using agave syrup as my choice of sweetener. That was my first step, what's yours?

Eating whole grains doesn't just mean switching your morning toast from white to wheat. It means eating actual whole grains preferably in their minimally processed forms. In place of white rice try brown. Eat steel-cut oats rather than instant. Try some different whole grains, like amaranth, millet, buckwheat, barley, or bulgur. Bulgur is one of my favorites. If you've ever had Middle Eastern or Turkish food, you've probably already eaten bulgur without knowing. The salad tabbouleh and the meatballs called kofta or kefteh are made with bulgur. It's not an unrecognizable grain, bulgur is actually wheat.

buerreblanc1.jpgButter and white wine…already you know this is good! Literally the French term for “white butter,” a buerre blanc is a traditional sauce with simple ingredients. Quite elegant and versatile for many dishes and full of garden flavors, this beurre blanc can become a backbone for your garden living lifestyle.

Brown an onion in some olive oil. Salt and pepper for flavor and then add garlic once the onion begins to caramelize. This is the background and foundation of your sauce, for the caramelized bits of onion and garlic are the keepers of amazing flavor. The wine will deglaze the pan, releasing the browned goodness of the onion cousins. Allow the wine to come to a simmer and reduce by a third. This step, reducing the wine, intensifies the flavor of the wine, concentrating the bouquet and natural essence of the wine. Tossing in a couple bay leaves awakens the sauce and steeps their flavor in the wine reduction.

Now for the namesake - butter. Add the cubed butter in shifts, whisking the butter into the sauce and allowing it to thoroughly melt it. Once the butter has thoroughly melted into the wine, the smooth sauce can now be livened up even more with some fresh lemon juice and zest.

BAKEDBEANSWhen ever we go out for barbque, I always, choose baked beans as one of my sides. There is something so satisfying and so comforting in eating a dish like this along with my tri-tip sandwich and a double portion of asian slaw.

I have had this particular recipe for baked beans in my repertoire for over 25 years. They serve a crowd – a very large crowd. Therefore, I only have a few opportunities through out the year to make this dish. Using only 5 ingredients, cooked slowly in the oven for about 5 hours, these baked bean are always the star of the evening.

This past July 4th, we celebrated the day with our good friends and 60 of their nearest and dearest. When I heard the number of people I asked if I could make my homemade baked beans. My friend, B, responded with, “my husband will love you and covet the whole pot, please do”.
